The art of the batch: our process
The story of Tears of Llorona begins in the volcanic highlands of Jalisco, where our Blue Weber Agave matures for nearly a decade- a long maturation essential for developing its foundational sugars and rich character. Our Master Distiller Enrique Fonseca personally inspects and hand-selects every agave, ensuring the quality and expression of each batch.
Slow cooking and careful distillation preserve the integrity of the agave, while the combination of barrels impart a blend of smoke, spice, and fruit which creates the perfect complement to the agave flavor. Yet it is in the art of blending where Tears reveals its soul, guided by Enrique.
A Trilogy of Casks
Rested in Scotch, Sherry, and Brandy barrels for five years; each cask adding a distinct layer of smoke, spice, fruit, and elegance.
A deliberate process
Tears of Llorona is a testament to the art of patience. Every step is intentionally and meticulously slow—from our master distiller’s hand-selection of each agave to traditional slow-roasting in steam ovens.
After fermentation with proprietary yeast in open-air tanks, the mosto is twice distilled in copper pot stills before its final, patient rest in carefully selected barrels.
Blended by a Master
Master Distiller Enrique Fonseca personally selects and marries barrels to create each limited batch, ensuring a unique expression of character and complexity. No two batches are exactly alike.
