An homage to our master distiller’s deep connection to agave cultivation, and a celebration of the agave’s essence.
Aroma: Cooked agave leads, with vanilla, orange blossom, and a hint of toasted pecan. A soft note of dried fruit lingers underneath.
Palate: A creamy texture with flavors of dark honey, roasted agave, and baking spice. The Sherry cask influence adds roundness and depth.
Finish: Ends with notes of cocoa and a whisper of smoke from the oak.

The coa de jima is an essential tool in the tequila-making process, used by the jimadores to harvest agave and a symbol of the deep connection between craftsmanship and tradition.
Aroma: Sherry-soaked raisins and butterscotch meet toasted walnuts, creating a rich and inviting nose.
Palate: A tapestry of brandied cherries, dark cocoa, and smooth agave, lifted by a gentle, warming spice.

The Aztec eagle represents strength, power, vision, and divine guidance in Aztec culture. It was one of the most revered symbols in the Mexican (Aztec) civilization, often associated with warriors, the sun, and the gods.
Aroma: Deep cocoa and dried plums lead, accented by a touch of aged leather and sweet agave.
Palate: Bold yet balanced, featuring notes of toffee, dried fruit, and a smoky whisper from its barrel aging.
